I recently made up a batch of Cinnamon-Oatmeal Pancake Mix to put in the freezer, reserving a couple of cups for dinner that night. We loved it! I saw the recipe posted by a woman on the Taste of Home website. With a couple of changes, here it is. I think you'll really enjoy it!
Cinnamon-Oatmeal Pancake Mix
In a large bowl, mix together well:
4 cups rolled oats
2 cups whole wheat flour
2 cups whole wheat pastry flour
1 cup nonfat dry milk powder
3 tbsp. baking powder
2 tbsp. ground cinnamon
1 1/2 tbsp. salt
1/2 tsp. cream of tartar
Once well mixed, transfer to a gallon-size freezer bag. I think you might be able to fit a double recipe of this into a gallon-size bag, especially if you take a bit out to make up right away (but I am not sure of this).
To make pancakes (about a dozen):
Remove from freezer bag into a medium-size mixing bowl:
2 cups mix
In a liquid measuring cup, mix together:
1 cup water
1/3 cup oil
2 eggs (I used egg whites. If you do this, I'd recommend adding a bit more liquid to the batter.)
Add liquid ingredients to the mix, stirring just enough to incorporate everything together. Cook up as you would any pancake recipe.
