Josh and I made vanilla ice cream with our neighbors last night (yummy and a lot of fun!). Normally I make a custard-based ice cream, but as we were short on time and yesterday was a little hard and I was quite tired, we tried a new (easier and faster) recipe. No eggs required, but it did call for sweetened condensed milk, which I don't have at the moment. I remembered my Great-Aunt Anna Mae had a couple of recipes in our family reunion cookbook for emergency sweetened condensed milk, so we tried one out. It worked well!
I wouldn't necessarily use it when the milk will take a prominent position in a recipe. I could still taste a hint of dry milk flavor in the ice cream, though it was subtle, and I'm not sure anyone else noticed it. So, if you're in a pinch and need some sweetened condensed milk, why not try this recipe?
Emergency Sweetened Condensed Milk
Makes slightly less than 1 1/2 cups
Heat to steaming:
1/2 cup water
Stir in until dissolved:
3/4 cup sugar
Add and stir until well mixed, thick, and smooth:
1 1/2 cups instant dry milk powder
Your sweetened condensed milk is now ready to use!

I love that your family has a collection of recipies shared at the reunion! What a great idea. Thank you for this recipe, Melissa. I have a lot of extra dry milk and I love sweetened condensed milk :-) My best friend growing up was half cuban and her family taught me to eat it plain or on fruit. I know you said it's not best when it is a primary ingredient, but I think I might try it to see how close it is.
